OUR Fiery BBQ JERK SAUCE RECIPE

Boneless chicken Thigh, Rice & Cucumber Mango Salsa

PREP TIME: 35 mins

INGREDIENTS:

  • Boneless Skinless Chicken Thighs – 600g
  • Rice
  • 1 Mango
  • Frozen Peas
  • ½ Red Onion
  • Cherry Tomatoes -250g
  • ¼ Cup Cilantro
  • 1 Green Chilli
  • Lime Juice

It can be cooked in the Air fryer, BBQ or frying pan.

METHOd

Step 1

600g of boneless skinless chicken thighs, season with salt, pepper and veg oil. Cook chicken thoroughly, add sauce 2 mins to end. Air Fryer cook 25 mins turn halfway, add sauce 10 mins to end.

Step 2

3 cups of with rice, 6 cups water, 1 cup of frozen peas, cook as per instructions on packaging.

Step 3

Finely dice 1 Mango, half cucumber, half red onion, 250g cherry tomatoes, ¼ cup cilantro, 1 green chilli, Lime juice, Olive oil, salt.
